Central City, Iowa microbrewery blends garage homebrewing roots with wood-fired pizza and a unique "Brewer in Training" membership program.
CEDAR FALLS, Iowa - TelAve -- Midwest Microbrew has released a new interview with Scott Witson, co-owner and head brewer of BIT Brewery in Central City, Iowa. The conversation highlights how three neighbors turned a garage homebrewing hobby into a full-service craft brewery and restaurant, and why their community-first philosophy is fueling steady growth in a small-town market.
BIT Brewery – short for "Best in Three", a nod to its three founding partners – began around 2011 when Witson was recruited by neighbors Jeff and Jason to brew all-grain beer in a garage. What started as a weekend hobby evolved into a business plan in early 2019, and by late summer of that year, the trio was renovating one of Central City's oldest buildings. The taproom, which brews all its beer on-site in a renovated basement, now serves wood-fired pizzas alongside an ever-rotating tap list.

said Witson, who previously worked in healthcare administration before making the leap to full-time brewing.
Among BIT Brewery's most distinctive offerings is its "Brewer in Training" (BIT) membership. For a nominal fee of $3.99, members collaborate directly with Witson to develop a custom beer recipe, participate in brew day, and ultimately release the beer on a date of their choosing. The program has produced unexpected creations, including a cucumber cream ale and a rye honey brown, that Witson says he would never have conceived on his own.
"They give me ideas that I have to come up with a recipe to hit what they're thinking in their head – and it's pretty fun,"
Witson said.
BIT Brewery also runs a mug club program that has grown from 50 members in its first year to approximately 142 members today. The annual $130 membership includes a personalized 20-ounce mug, a free beer each month, a birthday beer, and access to quarterly mug club appreciation nights. Beyond the taproom, the brewery actively supports local causes, hosting guest bartender events for the school PTA and the Community Cancer Center in Cedar Rapids, and participating in roughly one regional craft beer festival per month during the warmer months.
